Imperial Peking Duck began in Qianlong Dynasty in China and has a history of almost 300 years. Peking Duck is a special dish due to its secret recipe, which was developed during the imperial period. The ducks are hung and covered in special syrup then baked in the open wood fired oven for 60 minutes. The oak and cherry wood infuses the smoky flavour into the duck.
