Cooking Imperial Peking Duck.
Imperial Peking Duck began in Qianlong Dynasty in China and has a history of almost 300 years. Peking Duck is a special dish due to its secret recipe which was developed during the imperial period. The ducks are hung and covered in a special syrup then baked in the open wood fired oven for 60 minutes. The oak and cherry wood infuses the smoky flavour into the duck.
